Quick and Easy Lo Mein

This dish is a perfect dinner on the nights you don't want to cook- packed full of veggies, delicious noodles, and a simple sauce, you'll love this healthier version of the greasy takeaway!

Ingredients

Sauce:
3 tbsp soy sauce
1 tsp sesame oil
1 tsp white sugar 
*double if using more than 2 nests of noodles

Noodles and Veg:
2-4 nests of noodles (2 nests makes enough for 2-3 people)
1 tbsp sesame oil 
2-3 cups of thinly chopped veg (we love carrots, mushrooms, ginger, mangetout, peppers, broccoli
3 green onions, chopped (separate the green tops and the whites- you'll want to cook up the whites, and then sprinkle the greens on top at the end)

Extras:
Baked tofu
Toasted cashews
Edamame

Instructions

• Put the sauce ingredients in a jar and shake until combined

• Chop up all veg, heat up sesame oil in a large pan, then add in veg and cook on medium-high for 8-10 minutes

• While the veg is cooking, boil a large pot and add noodles. Cook and strain, then add to vegetables, pour sauce over top, and mix well

• Serve in bowls and top with chopped green onions and optional extras!
