Rinse 1 cup of sushi rice under cold water until the water runs clear. Add 1¼ cups of water and let it soak for 20–30 minutes. Bring to a boil, then cover and simmer on low for 12–15 minutes. Remove from heat and let it rest, covered, for 10 minutes. Season with rice vinegar, sugar, and salt while warm, and gently fold to combine. |
